Grain free granola

This recipe is so versatile! Make a big batch and store it in your fridge in an air tight container. This recipe can be used for breakfast, dessert and even use as the base in your favourite keto desserts!

Instructions
  1. Preheat oven to 180 degrees celcius
  2. Using a food processor (nutribullet also works well) blitz in 1 second bursts 1 cup of almonds. You want this to be slightly chopped but not too fine. Do the same with 1 cup walnuts. If you do not have a food processor you can chop the nuts by hand. Transfer chopped nuts to a large baking dish.
  3. Add the remaining nuts, seeds and spices to the baking tray. Set aside the LSA, chocolate chips and psyllium husk. Using a wooden spoon stir the ingredients together and bake for 6 minutes. Stir again and bake for a further 4 minutes or until golden.
  4. Remove from the oven and let cool for 10 minutes. Add the remaining ingredients and stir together using a wooden spoon.
  5. Let the granola completely cool before transferring to an airtight container. Store in the fridge- this will keep for a couple of months.

This grain free granola is served best with warm berries mixed with a couple drops of stevia  and a dollop of full fat greek yogurt or coconut yogurt.

To use as a cheesecake base use 1 cup of the granola add 1/2 cup melted coconut oil and blitz using a food processor. Press into your non stick sprayed baking dish. Place in the fridge for at least 10 minutes to set. Top with your favourite keto cheesecake recipe and enjoy!
