Put mozzarella and cream cheese in the microwave safe bowl and microwave for 40 seconds. Stir and ensure it’s melted add a further 15 sec until fully melted
In a bowl whisk all dry bagel ingredients (almond flour, psyllium husk, salt and baking powder)
whisk egg in a seperate bowl
With your hands mix the dry ingredients and melted cheese, slowly add in the egg until mixed well… (it wont be perfect)
Roll into a log and cut the dough into 8ths. Roll each bagel and shape into a ring and place on the pre-lined baking tray.
Brush the bagels with butter and sprinkle with your toppings.
Bake for 12-15 minutes until slightly golden.
Let them cool completely and store in an air tight container in the fridge.

To eat… toast and cover with your favourite toppings.. Mine is cream cheese, tomato and avocado or make a BLT!
